Risotto

Practicing mindfulness demonstrates that some things unfold in their own time; like a Risotto. It’s the one dish that can force you to slow down.

There are 2 steps to creating the perfect Risotto; the ‘sofrito’ or flavour base is the starting point of your Risotto. Adding stock in increments to cook the rice is the second. The rice should begin to self-cream once the rice has cooked al-dente.

This recipe is for 2 people. Adjust the measurements.

INGREDIENTS

  • 1 tbsp butter
  • 1 tbsp olive oil
  • Half a finely cubed onion
  • Half a tsp ground garlic
  • Half a cup of chopped mixed mushroom
  • A few sprigs of thyme
  • 1 cup @tasticricesa Arborio Rice
  • 1.5 liters of chicken stock, of which you will only use half of the quantity. If you are using homemade stock, be careful of overseasoning with salt
  • Quarter cup of Verjuice
  • Freshly ground black pepper

For garnish

  • A handful of mushroom
  • A few sprigs of thyme
  • Olive oil or garlic-infused olive oil
  • Salt
  • Freshly ground black pepper
  • A cube of butter

Instructions

  1. Add the butter and olive oil to a pan. Add the onion and cook for 4 minutes on a low heat. The onion should not brown. Add the garlic.
  2. Add the mushroom and toss on a medium heat. Add the thyme and cook for 3 to 4 minutes, just enough for the Mushroom to begin shrinking and releasing a liquid.
  3. Add the rice and begin to stir well. The rice should be coated with the fats and Mushroom.
  4. Bring the heat up to medium-high. Add the Verjuice and allow it to boil rapidly.

    Now for the next 20 to 25 minutes, ladle in stock, stirring all the time. At the end, the rice will be cooked, fluff up and create a rich creamy sauce.

  5. Allow to rest for 2 minutes before plating.

    Top with the garnish:

  6. Add a splash of oil to a non-stick pan. Add the Mushroom, thyme and seasoning. Allow the Mushroom dry up.

  7. Finally add a cube of butter to the garnish and top the risotto with it. You may add a final drizzle of garlic olive oil and Parmesan cheese of available.

    Verjuice is used to deglaze a pan. If you don’t have it, you may omit.
